Ingredients:
2 medium sized baking potatoes - well scrubbed and dried.
60 g stilton, gorgonzola or other blue cheese - crumbled
25g butter
1½ tbl olive oil
3 tbl double cream
Optional 20 g roughly chopped walnuts
Salt and pepper
Method:
Deeply prick the potatoes with a fork and bake at 200°C for 1 hour.
Meanwhile, in a medium sized bowl, use a knife to combine the cheese and butter and a good amount of freshly ground pepper.
When the potatoes are ready, cut in halves and using a teatowel to hold them, spoon out the flesh into the bowl with the cheese/butter. Thoroughly combine using a fork, then mix in the cream.
Brush the inside of the potato skins with olive oil, sprinkle with salt and bake for 8 minutes until crisp.
Spoon the filling into the crispy skins and bake for a further 15 minutes until golden.
Serve with coleslaw, chutney or sauerkraut.
