Baked garlic paste

Pre-heat the oven to 200°C

Lightly coat the whole garlic cloves (as many as you wish) in oil, sprinkle liberally with salt and freshly ground pepper. Wrap tightly in foil and bake for 40 minutes.

Once they have cooled, remove the foil and sqeeze out the garlic pulp.

This can be stored in an air-tight container in the fridge for up to a week.

Use the garlic to flavour hummus, soups, roast vegetables, whatever!
