Berbere spice mix

Ingredients:

2 tsp coriander seeds

1 tsp cumin seeds

½ tsp fenugreek seeds

1 tsp black pepper corns

2 wholespice berries

The seeds of 4 green cardamom pods

4 cloves

2-5 dried chillies, seeds and membranes removed (You may use whatever heat chilli you prefer; I've used 1½ mild ancho chillies with 2 hot, red chillies)

2 tbl sweet paprika

1 tbl smoked paprika

1 tsp salt

¼ tsp nutmeg

½ tsp ginger

¼ tsp cinnamon

1 tsp turmeric

½ tsp onion powder

Method:

Toast the whole seeds, with the chillies in a dry pan. Stir to avoid burning.

Leave them to cool and then grind with a pestle and mortar or spice grinder.

Add the remaining ingredients and combine thoroughly.

Store in an air-tight container away from the light.
